Need inspiration for meals that can have vegan and meat variations

e.g. chilli con carne (can cook the mince separately, then add in at the 'stick in oven/in pot on hob' stage).

As an 'interesting' side effect of this pregnancy, I can't eat any meat/cheese/eggs/fish without throwing it back up again. Going on holiday (self-catering) and would like to be able to eat one meal with variation, rather than two completely separate things!

All sorts if beans/pulses based dishes can have cooked meat added at the end (eg leftovers from a roast)

I do loads of meals like this as 1/2 family are vegan 1/2 not. I cook up a load of mince, chicken, beef, pork and freeze in freezer bags then when I make a meal such as curry, bolognese, chilli, casserole, pasta bakes etc I split and add meat to there half. Actually most of the time they don't know if it's missing and they've been eating TVP chilli for years thinking it's the real deal!

Can the carnivores just not eat veggie for a while?

Stir fries are easy. Make a vege one and then add cooked meat or cooked tofu or some nuts.

Pizzas.

Pitta breads and salads, with meat for the carnivores and falafel for the veggies.

Baked potatoes with selection of toppings.

Fajitas.

personally I'd do a veggie thing and then let carnivores have meat on the side, if they insist.
