What's The Best Biscuit Recipe? N.B. that is not a cookie!

Hi All,

I can't decide what biscuits to make for my father. Several of the ones I have tried have turned out soft which is highly irritating as the ingredients and cooking time would lead one to think other wise. I am looking for a proper English biscuit with crunch that is not chocolate or filled with jam. Any help would be much appreciated! Malted milks would be best...

can I suggest custard creams? made from scratch they are just gorgeous

That's a good one...I was trying to avoid sandwich biscuits though as my father decides they are 'naughty'!! Maybe I could make them without the filling?! I was thinking of doing this with my bourbon recipe. When I have looked at these recipes before they all call for icing sugar. Where could I find a good one?
