This is in one of my veggie recipe books - haven't cooked this recipe myself though.
Aduki bean and red cabbage casserole
175g aduki beans
175g mushrooms
1 garlic clove
4 tspns olive oil
450g red cabbage
3 med red onions
2 tbspns tahini
2 tbspns tomato paste
850ml veg stock
1 tspn caraway seeds
2 tspns dried dill
2 tbspns raisins
salt and pepper if req
Soak aduki beans for 3 hours (at least) in lots of boiling water, rinse well, cover with boiling water and cook for approx 40 mins until soft.
Chop mushrooms (or leave whole if small), crush garlic clove.
Sweat mushrooms and garlic with 2 tspns of the olive oil in a saucepan or casserole dish until soft, remove from pan.
Cut red cabbage into rough chunks and onions into large segments. Add onions and cabbage to the pan with remaining oil and sweat until they start to soften.
Stir the tahini and tomato paste in a little stock to dissolve, add to the pan along with remaining stock, mushrooms, aduki beans, caraway seeds, dill and raisins.
Transfer to ovenproof dish if necessary.
Place in preheated oven 200C/400F/gas mark 6 for 1-1 and qtr hours or until veg and beans cooked and most of liquid absorbed.
Optional:2 tbspns chopped fresh parsley - stir in just before serving.
