I have a cook book with sugar free muffins - they are sweetened with concentrated apple juice. There are loads of different recipes with most combinations of fruit. I often make one with apple and/or pear and raisins. Let me know what you are interested in and I will look in my book.

makes 12 muffins

200g SR flour
1/2 tsp baking powder (1tsp if using dates)
2 fr eggs
5 tblsp sunflower oil
5 tblsp ff milk
1 tsp vanilla essence
2 ripe bananas (approx. 325g unpeeled weight)
100g choc drops (or chopped apricot or raisins)

sift flour and baking powder into one bowl, mix wet ingredients in another mash bananas with fork then fork all ingredients briefly together add choc or dried fruit spoon into cases and bake at gas mark 6 for 15 mins. Too use dates add 175g chopped stoned dates to 300ml water in pan bring to boil then simmer for 5min mash then cool and add to mix as with banana. I find the date muffins sweeter and more moist.
