We eat healthily in our house, but its the same boring stuff, but i do have emergency pizzas & oven chips which i want to abolish.

can i have some yummy recipies please?

DS (20 months) eats really well and will try most things

Leek,potato and bacon bake has always been popular in our house. Will post recipe if this is not one of your meals already.

Here goes:- Leek, potato and bacon bake.
900g potatoes, thinly sliced
2 leeks, trimmed and thickly sliced
225g bacon, cooked and chopped
1 pint of cheese sauce
2tbsp breadcrumbs and 40g cheese for topping

Boil potatoes in water for 4 minutes, then add the leeks for 1 minute.Drain.
Pour into a large ovenproof dish with the bacon and mix well.
Pour over the cheese sauce - either made or bought.
Sprinkle with breadcrumb and cheese mix and cook for 45mins 200c, gas 6.

Here's one for chicken & leek lasagne which we all love (DD is 16 mths)....

50g unsalted butter
2 leeks, washed finely sliced
1 courgette, chopped
2 large, skinless chicken breasts, diced
50g plain flour
600ml (1 pint) full fat milk
1 tbsp grainy mustard
25g gruyere cheese, grated (you can omit this if you like)
6 lasagne sheets ? ready to cook
2 tbsp parmesan cheese

  • Pre-heat the oven to 180â—¦c. Melt the butter in large saucepan or frying pan, add leeks and cook until they begin to soften.

  • Add the courgette and chicken, and stir-fry for a few minutes until the chicken is just cooked through. Add the flour and cook, stirring continuously for 1 min.

  • Remove the pan from the heat and stir in the milk, a little at a time, until the sauce is smooth. Return pan to heat and bring gradually to the boil, stirring continuously, then simmer for 2 mins. Add the mustard and remove from the heat, add the gruyere cheese and stir in.

  • Lightly oil a lasagne ovenproof dish about 7.5 cm deep. Layer the chicken pieces and lasagne sheets, starting with a layer of chicken and finishing with a lasagne sheet, and using a slotted spoon for the chicken so that you leave the sauce behind in the pan.

  • Spoon the remaining sauce over the lasagne, sprinkle with the parmesan and bake in the pre-heated oven for 25-30 mins until golden brown on top.

lentil and potato curry. My daughter (18 months) loves it and so does everybody else who has had it. it is not complciated but it takes a while to cook (not that you have to stand over it) so i freeze it in big portions.

Good way to smuggle invegetables as well./

Ksmum-Please post the lentil and potato curry recipe - it sounds yummy - my 18 month DD already enjoys veg curry and I want to extend her repertoire.
