I need one asap. Mine never rise as well as others and there never light and fluffy. (the dc's like them though!)

100g s/r flour
100g caster sugar
100g butter (soft - or invest in some Stork)
2 eggs.

Sift flour, add all ingredients toegther, beat well with wooden spoon.

10 mins 180deg C then turn, bake 2 or 5 mins more.

makes bewteen 12-15 buns providing you can stop little helpers eating the mix when your back's turned

Fairy Cakes

Ingredients:
50g soft margarine
50g self raising flour
50g caster sugar
1 egg

Method:

  1. Set the oven to Gas mark 5 or 190ï‚°C.
  2. Place 6 paper cases in to a patty tin.
  3. Sieve the flour and the caster sugar in to a large bowl
  4. Add the egg and the margarine to the large bowl.
  5. Using an electric hand mixer or a wooden spoon, mix until light and fluffy.
  6. Using a teaspoon fill the paper cases.
  7. Bake in the oven for approximately 15 minutes, until the cakes have risen and are golden brown and springy to touch.
  8. Decorate the cakes with water icing and coloured sugar strands.

Weigh your eggs, and whatever their weight use the same of butter, sugar, sr flour.

I personally beat the sugar and butter till fluffy, beat in the eggs and fold in the flour. 125g/125g/125g 2 eggs makes about 15 cakes depending whether you want to ice them or make butterfly buns (fewer if so as you need more of a peak).

125grams butter
1 teaspoon vanilla
2 cups flour
pinch of salt
200ml sugar
2 beaten eggs
2 teaspoons baking powder
160ml milk

Mix butter and sugar. Add vanilla and then eggs. Sift flour, baking powder and salt and add to butter mix.

Bake at 180 degrees C. for 15 minute or till done.

Icing:
60grams butter
10ml milk (boiled)
2ml vanilla
1 cup icing sugar

I don't think it matters how old the thread is. The recipies can be older then that but what matters that they still work. Thank you everybody.
