Inspiration needed please for easy supper with friends - fed up of BBQ!

Something light and summery and doesn't need hours in the kitchen when I'd rather be sipping Pimms in the garden!!

Quiche, salad and new pots.
Chicken with pitta bread and salad (maybe spicy marinade)
Something with couscous maybe lamb or chicken
Stir fry chicken and noodles

Quiche. Can be made in advance and served with salad?

Baked Camembert with crusty bread (and salad)?

Cold meats/cheese board/olives/tapas type dishes?

Roasted veg couscous with goats cheese or feta on top, side salad.

Delia has a particularly amazing version with a spicy dressing. A bit more work than usual but utterly fantastic. I don't other with the salting of courgettes and aubergine which cuts the workload a lot.

Some great ideas thank you! May go with Evertonmint's veg couscous though as that sounds delish!!

Bit late in coming back to this but I made Delias veg couscous and it was a massive hit - friends asked for the recipe. It was yummy and I've made it again since. Now a firm favourite!
