Sorry to shout but I feel I have been ignored all day.
I am trying to find the ultimate lemon muffin recipe.
I would be sooooo grateful if you have any.

I don't know about lemon curd muffins (need to do a bit of looking through cookbooks) but if you go on the bbc site (www.bbc.co.uk), click on food under the Lifestyle section and type in lemon muffins in the Search, it does come up with lemon drizzle muffins (sorry about the wordy answer, not sure how to do links!)

How about this one ? It's American but it's easy enough to translate; a cup is 8oz, all-purpose flour is plain flour, and a popover tray is a bun tray like you'd use to make small Yorkshire puddings in.

I have found this

Lemon Curd Muffins

2/3 cup milk
juice and grated rind of 1 lemon
2 eggs
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup lemon curd
1/2 cup raisins
2 cups flour
1 cup shredded coconut meat
1 teaspoon baking powder

Preheat oven to 375ºF, prepare pans.

Mix all ingredients except the flour and baking powder. Add flour and baking powder and mix until just blended.

Spoon into pans and bake for 20-25 minutes.

Makes 14 moist and tasty muffins.

Can you take a basic muffin recipe and add the lemon bits from MarsLady's lemon drizzle recipe? I think I might try this later.

Spent a very small time working in the bakery industry and this is how they made lemon muffins.
Use an ordianry muffin recipe but add lemon zest to the mixture. Then once you've baked them get one of those little plastic pipettes and inject the middle of each one with lemon curd (a lot of faffing around I know, but worth it) and then if you like just make up some lemon icing (just icing sugar with lemon juice and zest) and top each one with icing.
