Should I roast the beef joint with stilton thrown in or make a separate sauce

Which will be better? I like the idea of just throwing it in and letting it cook in the stilton because I'm lazy but will it work?

I think the Stilton would probably catch and burn. So sauce is the better option in my opinion.
