Tell me about vinegar in Muffins

I've heard it makes them rise.
How much do I need?

I have a vinegar-less muffin recipe from Reimer

Something to do with the acid reacting with the baking powder to aerate them. Same reason that buttermilk is used in soda bread.

I'd hazard a guess that if the recipe doesn't have vinegar in it it'll be fine without it - I've never added vinegar to my muffins and they rise fine.
