Something to do with the acid reacting with the baking powder to aerate them. Same reason that buttermilk is used in soda bread.

I'd hazard a guess that if the recipe doesn't have vinegar in it it'll be fine without it - I've never added vinegar to my muffins and they rise fine.

I've never heard of adding vinegar! (but then again I'm no Delia ). Its not mentioned in the muffin cookbook I've got
