Easy, dairy free veggie meal I can cook tonight?

Dairy free as b/feeding allergic DS, have decided to do Meat Free Mondays and totally out of inspiration.

Any ideas gratefully received! Thanks in advance.

Ps extra Thanks for anything that is quick to cook (to minimise wailing from 8 month old who is outraged whenever he's put down) and fairly easy to cook (to minimise mistakes made by v sleep deprived me)

Veggie stir fry, using packet rice, with soy sauce. 4 minutes max

Roasted veg (peppers, onions, courgette and aubergine are my favourites) chopped into chunky pieces bunged in the oven for about 45 minutes or so with some italian herbs, a bit of black pepper and a squeeze of lemon juice. Stir everything including the cooking juices into some cous cous.

black bean chilli is super easy. You can use different beans if you don't happen to have a tin of black beans in the cupboard. Or white/red wine vinegar if you don't have any cider vinegar.

Bean Casserole is my swift go-to veggie meal. I have never met anyone who didn't like it!

britishfood.about.com/od/tzrecipes/r/tombeancasserole.htm - this is pretty much how I make it though I don't use a proper recipe. Just use oil not butter.

Slow cooker lentil soup - throw in frozen chopped onions, stock cubes, squirty garlic from a tube, pour on boiling water, add split red lentils and cook for about 4 hours.

I also sometimes make a similar concoction with less water and add tinned kidney (or other) beans, tomatoes, smoked paprika or barbeque sauce. Then serve with packet rice, tortillas or toasted pittas.

Jacket potato (or sweet potato) cooked in microwave with houmous and salad.

Google for oven baked versions, I just make irbil as I go along now.

Thanks all - this week did big stir fry (have a rice cooker which makes cooking rice so easy), will try some of the other great suggestions in the following weeks!
