Which of these 3 biscuit recipes would you choose for number biscuits?

L to R: BBC vanilla biscuits one (I think); Biscuiteers one; Nigella butter cut-out biscuits.

Need to make letter biscuits tomorrow but don't know which recipe will be best! Don't want too hard a biscuit. I did do the nigella one years ago but remember the dough being really sticky & a nightmare. Maybe that was just me though??

If anyone knows anything about these recipes or knows their ingredients well, what recipe would you choose??

Well, on first impressions the middle one is high in sugar and will likely have crunch due to the syrup. The first may have a more delicate crumb due to the yolk and lack of egg white (the latter 'dries' the biscuit') and I think is considered more of a sable. I am no good at making decisions between recipes, so I apologise for not being very helpful!
I was on the quest last year for such a recipe and found the following to be the best of all I tried:

100g/3½oz unsalted butter, softened at room temperature

100g/3½oz caster sugar

1 medium free-range egg, lightly beaten

275g/10oz plain flour

1 tsp vanilla extract

190C/375F/Gas 5

Cream the butter and sugar, add the egg + vanilla a wee bit at a time, gradually work in the flour. Roll, cut and bake for 8-10 minutes, cool for 5 on the tray and transfer to a wire wrack. Ice as desired!
