Anybody have any beetroot recipes to share?

I have grown some beetroot and need some recipes to use it. Any suggestions will be very much appreciated Smile

Beetroot and chorizo hash, mmmmm! My own creation:

Fry onion, cubes of pre-cooked beetroot and potato and chunks of chorizo until golden and crispy to your taste. Fat from chorizo will mean you need not much oil. Once it's looking good, add in some chopped garlic, cook, add chopped dill, fry a couple more minutes. Serve in a pile topped with poached egg, more dill and a side of asparagus!

Chocolate beetroot cake? Never tried but the beetroot will make for a cake as moist as a carrot cake I'd imagine! I hear it's great but a bit earthy.

Cut the beetroot into wedges so it is about 2 cm across and looks nice. Make a mix of spices that smells nice eg fennel seeds, pepper, coriander seeds - whatever you like - and a few nuts eg pistachio and toast them together in a dry frying pan until aromatic, then grind in a pestle and mortar. Sprinkle over the beetroot and drizzle with oil then roast in the oven for a little while - not long enough to cook them perfectly but enough to take the edge off.
Make pastry with cheese in it and bake a flan case or small tart cases blind. Mix goat cheese with bland cream cheese and parsley until soft and nice. Fill flan cases and arrange roasted beetroot on top. Bake for half an hour ish. Faffy but delicious and can be done in two bits (do half day before then put together and finish off).

I used to use up the beetroot in the veg box by putting it in Choccy cake ! Veg by stealth !

Beet root salad Scandinavian style - mix half and half of mayonnaise and creme fraise or soured cream, with a teaspoon of whole grain mustard- add to chopped beet root - yum!

Whizz cooked beetroot to a paste with fresh lime juice and serve drizzled over pan fried halloumi alongside a rocket salad and some crusty bread. Yum.

a staple in Polish main courses - a side dish called Buraczki Zasma?ane, closest translation would be fried Beetroot (but that translation doesn't sound very well)

you can use onion in this dish but I prefer shallots as they are sweeter and softer, they also cook very quickly
sweat your finely chopped onion or 4 shallots on a tbsp of butter
you can also add one clove to your onion if you have some in your cupboard also some cooks like to add on chopped clove of garlic at this stage
once onion is cooked add a tsp of plain flour, mix and cook for 1-2 min but try not to burn it

meanwhile take your pack of shop bought cooked beetroots (those without vinegar, a pack of 4), I usually wear a pair of kitchen gloves to stop my hands getting stained, you can grate your beetroots finely or on the thicker side of the grinder
add grated beetroot to your slightly fried onion&flour mixture including all the juices from grating and the bag
warm it through
add a pinch of salt, some people ad this stage add some freshly ground black pepper, a tsp of vinegar/lemon juice and/or a tbsp of single/double cream

Serve it warm, it can be made 1-2 days in advance and reheated with few tbsp of water.

I think this goes well with both beef or pork dishes.
