any1 have a good cheese sauce recipie

want to make a nice sauce for dd fish and potatoes and thought this would be good. does any1 have a good recipie

2 teaspoons of cornflour
half pint of milk
nob of butter

2 handfuls of grated cheese

doesn't get any easier than that

prettymuch same as stinky cept I use plain flour and stir in some English Mustard at the end for a more robust flavour.

1.5oz butter
1oz plain flour
3/4 pint milk
cheese to taste

Put milk, flour and butter into saucepan. Heat stirring regularly. Add cheese as sauce starts to thicken.

make a white sauce then add grated cheese at last minute and stir.
white sauce: melt butter and add flour gradually. when it turns a bit doughy add milk very slowly and stir like mad to stop lumps.

If you don't want to make a roux, a really nice cheese sauce is to melt some butter, stir in creme fraiche, season and stir in cheese to taste. Just make sure you don't leave it as it may split. This also makes a fantastic pasta sauce if you use gorganzola/roquefort (comes from the River Cafe), or add parmesan, lots of black pepper and basil, and serve with roasted toms on top (for my version of pasta alfredo). Yum

oh just remembered - its even better if you use mascapone instead of the creme fraiche for either the normal cheese sauce or blue-cheese pasta [stick with creme fraiche for pasta alfredo though!]

why do i use cornflour if everyone else uses plain? what's the difference??

I use ths recipe . It's pretty foofproof.

well i made it with cornflour and dd loved it she ate all her dinner and she doesnt normally touch fish
