(Very) quick meals to make in advance (but not batch cook)

I wfh one day a week and have about 30 mins to spare between finishing work and picking up dd. What can I make for dinner for dp and I that is ok to sit in the fridge until later? It needs to be:
Non-meat (but fish ok)
Low-ish carb (not a fan of pasta or jacket spuds)
Either reheatable v quickly or cold salad is fine

I literally do only have 30 mins max though and once dd is home I want to be spending time with her, not cooking.
I'm not a fantastic cook but can do the basics. Pre-dd I would have made various Jamie Oliver simple fish recipes or veggie curries or quiches. I find though either these take too long or need to be eaten sooner. I can just about do the quiche in 30 mins but am getting a bit fed up of it!

I like kebabs for a quick dinner. I do veg and paneer ones, smeared with a bit of curry paste. You can make in advance and keep in the fridge then they need about 10 mins under the grill. I serve with cous cous or chapattis, both of which take minutes to cook, and maybe some dhal if I've got some in the freezer

Born: sounds lovely, do I need to pre-cook the veg before grilling? Have tried in the past (though on a BBQ) and the outside charred but some of the veg were raw.

I have just made the following for lunch:
Couscous soaked in a little veg stock, grilled aubergine, cherry tomats, goats cheese and a little mint.
15 mins max and surprisingly filling.

No, I don't pre-cook. I use peppers, onion, cherry tomatoes, courgette and don't have the grill too hot.

Sorry not a fan of couscous or macaroni.
