It is really good, I promise! I know it with some odd Turkish name which I can't remember that translates to 'The Priest Fainted" (supposedly in ecstasy at the taste!). From memory, you halve an aubergine, scoop out a bit of the flesh and fry this with chopped onion, a can of tomatoes, a handful or so of raisins / sultanas and a nice sprinkling of cinnamon (I like lots). Then you pile it all back into the aubergines again, put them on an oiled dish and pop in the oven until the aubergine is cooked. When I make it I chop up all the aubergine and just cook it all on the stove - it is quicker than having the oven stage and tastes the same although it doesn't look quite so classy!

i like cous cous soaked in a bit of veg stock for 10 minutes with pre-chopped ginger added to taste, and add things like a few crushed almonds, a few chopped apricots.
