Aubergine cheesecake

tethersend · 04/06/2014 18:44

Vegetable pie- vegetables in cheese sauce, pastry.

Minicooper · 04/06/2014 18:46

You could start with this
theottolenghiproject.wordpress.com/2013/03/17/roast-aubergine-with-saffron-yoghurt/
which is amazing - maybe with pita breads, humous, babaganoush etc.
Then something simple for a main - tomato and basil tart or similar with salad. Then chocolate cake for pud!

RiverTam · 04/06/2014 18:47

Jamie's spinach, feta and filo pie - takes a bit longer than 30 mins but looks impressive and is v tasty!

Spanakopita? (Spinach and ricotta in filo)
Sweet potato and chickpea curry?
Vegetable gratin? (Courgette, aubergine, peppers, tomato)
Butternut squash risotto?

Nice macaroni cheese?

Roast sweet potato with nice salad?

Grilled halloumi

ShoutyMom · 04/06/2014 18:50

Do an Indian theme. I have used this website in the past, usually with good results. Loads of recipes that are onion free.

FunnyFoot · 04/06/2014 18:51

Sweet potatoes chips

Roasted Butternut squash Risotto Just leave out the onion.

Avocado Tacos

Waldorf salad

ShoutyMom · 04/06/2014 18:53

Vegetable lasagna - just skip the onions. Or cauliflower cheese. Serve with nice salad and bread.

lljkk · 04/06/2014 18:58

Lasagne, no? Just prepare without onions.
step-mum can't have onions & doesn't like red meat. She likes most types of pizza, salad, most things, really.

Delia has a wonderful roasted veg couscous with a lovely dressing and I think goats cheese. If it has onions and mushrooms in the roasted veg you can easily leave them out without it affecting the overall taste. It is a really, really delicious meal and looks fantastic served in a huge bowl in the centre of the table.

evertonmint · 04/06/2014 19:02

Found the Delia recipe here. No mushrooms, and you can easily do it without onions.

LadyMud · 04/06/2014 19:06

Cauliflower cheese is even better with broccoli, Shouty
(as well as the cauli, not instead of)

TheBitterBoy · 04/06/2014 19:15

That Delia couscous recipe is fab, I have made it several times and my guests have always raved about it.

TippiShagpile · 04/06/2014 19:28

Checked out the rice stuffedeppers on BBC good food. Also the aubergines, tomato and mozzarella with basil. Seriously yum.

ShoutyMom · 05/06/2014 09:28

Oh yes, cauli and broccoli cheese, very nice!

Universal · 05/06/2014 09:33

Hugh Fernley W does a fab aubougine curry with green beans. It's in his veg book.

ShoeWhore · 05/06/2014 09:36

the chickpea salad here without the ham obviously! I used tinned chickpeas. It is utterly delicious - I serve with couscous and/or flatbread and perhaps a tossed green salad.

aoife24 · 09/06/2014 18:42

The aubergine cheesecake is delicious.

MrsMaturin · 09/06/2014 18:48

All I can say is thank goodness they aren't vegan too!
