I was going to say chilli! If you want to make chilli special though:

bake sweet potatoes
make chilli
make a salsa from mango, red onion, red pepper, coriander, red chilli, lime juice

Pile chilli onto the potatoes, top with salsa and a glob of soured cream. Gorgeous - and healthy(ish) too!

Fry mushrooms, and pancetta, then put in a large mixing bowl. Add some chopped spring onions.

Halve the potatoes, and holding the halves in a clean cloth, scoop out most of the flesh into the bowl, leaving enough so they still stand up. Grate in some cheddar, and season with salt and pepper. Mix altogether.

Spoon the mix back into the potatoes, and put them back in the oven for about 15-20 mins, until they are a little browned on top (just little peaks of brown, not brown all over!)

Mmmmmm!

(I also have a recipe to do similar to this making samosa flavoured stuffed jackets, but it's down two fights of stairs, and I'm in bed!)

No recipe - just the ingredients below. Chop small and mix; add s&p. One mango / one red onion / one red pepper / one red chilli / juice of one lime / lots of coriander

Chicken curry made using chip shop curry sauce - you can get sachets to make this up in supermarkets. SO GOOD.

Chilli but with a huge dollop of sweetcorn on top.

Baked beans mixed with mushed up corned beef, like a corned beef hash.

NationMcKinley You beat me to it with the mushrooms and Stilton, but I have been known to make a proper cheese sauce, and also pop in a couple of chopped up rashers of bacon.

This is also AMAZING with pasta, and a Chez Meow staple.

Baked potatoes with sausages, leeks and wholegrain mustard is nice. Cook the sausages as you would normally. Cook the leeks in butter and stir through some mustard. Lovely!
