DINNERS with less than five ingredients... !

Just thought that if we had a thread with loads of easy dinners, then that would save me faffing around rejecting all the recipes that require loads of things I don't have! I mean easy peasy family meal recipes!

Here's mine:

Easy sausage casserole:

fry 1/2 onion per person with some garlic, add 2 sausages per person cut into bite size pieces, and stir fry for 5 mins or so. Add 1/2 tin tomatoes per person and 1/4 pint veg/chicken stock per person. Leave simmering for 15 mins or so and bobs your uncle. Serve with mash or potatoes and veg of your choice. That's like 5 ingredients! Anyone else?

pesto chicken 5 ingredient version

chicken
pesto
philidelpha cheese
cheddar
beefsteak tomato

Mix pesto with phily to taste
smother over chicken breasts
top with sliced tomatoes
cover with cheddar cheese and bake.

For more than 5 you could add different cheeses, i.e parmesan, Mozzeralla

I sometimes stuff the chicken breasts with fresh basil or fresh chillis.

honey
raisins
bread

mash banana,
mix with ricotta, honey and raisins and bung inn a sandwich, you could also add a bit of cinamon or nutmeg.

Spicy Butternut Squash Soup

Onion
Teaspoon of Thai Red or Green Curry Paste
Coconut Milk
Marigold veggie stock
Butternut Squash

I tend to roast the squash first as i think it deepens the flavour. I whizz this and if i am feeling very virtuous drop in some tofu pieces as well.

Slobber chicken with the gooey stuff and stick in over at 200C for 45 mins

Chicken, leek and potato pie:

Chicken
Leeks
Can of leek and potato soup
Potatoes

Cut up the chicken breasts and brown in the pan add leeks and soften, glug on a can of leek and tattie soup, adjust seasoning. let it simmer away.

Slice potatoes and par boil.

Put Chicken and leek mixture in a dish, place sliced potatoes over the top - at this point you can grate some cheese over - bake in oven for 20 mins or so !!

BAda Boom - Bada Bing !!

wine. cheese. bread. chocolate. easy.
baked potato, cheese or tuna, veg.
pasta, pesto, cheese, brocolli, tomatoes.
toast, egg.

Some wonderful ideas in here hidden among the cheek! ginmummy I was going to try your soup today but my carrots aren't old and wrinkly - will it still work?
