I'm sure some of you will have seen this blog before, it's by a former bake off contestant. This week I've made her raspberry ripple cake with cheesecake filling and today I've made lemon and Poppy seed tray bake. The raspberry thing was wolfed down at a coffee morning by very appreciative friend and this lemon thing smells amazing. You microwave a whole lemon and purée it then add to the cake mix. The batter was really lemony. Will definitely be trying some more recipes.

I've been a fan of hers since the Bake Off. Everything I have baked from her site or book has come out really well. Certainly going to bake that raspberry cake. It looks delicious. I have her book Cake Making and it was well worth the money. The choc chip and fudge cake in it is particularly good.

Loving just spotted that you were thinking of making the raspberry cake. Is it the raspberry ripple cake and if so, have you baked it yet? Was thinking of doing it this week when DMIL comes for tea.

Made the raspberry ripple cake today. It's delicious. The sponge rose beautifully and is really light and fluffy. The cheesecake filling works really well. I need a little more practice at swirling in the raspberry purée in but will definitely be making this again Grin

I'm a bit of a novice baker and I made the lemon and poppyseed tray bake.
The recipe is a total of 345g of sugar. As I was weighing it out, I reckon 1tsp is 5g sugar, so the whole recipe is 69tsp of sugar....
I reckon the whole lemon would need a lot of sweetening, so unless I'm wrong somewhere, I'd use pith and lemon juice, and less sugar in future.
Any comments from wiser and more experienced bakers would be welcome.
