HELP! I need a tomatoLESS meatball recipe now please.

I'm hoping one of you lovely lot can help me. My DH is suddenly very intolerant to tomatoes (recent diagnosis) and I have bought meatballs for dinner without thinking it through. I usually cook them in the oven with chopped tomatoes, herbs, green olives and a bit of olive oil - it's yummy.

I have meatballs, pasta, rice etc but don't know how to make it interesting. I don't have spinach or similar only carrots, frozen peas, baby sweetcorn and cucumber. Don't have yoghurt either Sad

Any ideas on what to do asap?? We're eating at 5.15pm today as DH working at 6pm tonight and we eat as a family.

A tin of mushroom soup makes a great base for a mushroom sauce. Fry off the meatballs with an onion, add thawed peas and mushroom soup, simmer until cooked through. Serve with rice or pasta and salad bits.

I'll have to fry them and add pasta tonight and do something a bit more exotic next time. Any recipes would be marvellous even if too late to do tonight.

Thanks JennyWren. Don't have mushroom soup but do have stock so could use that I guess.

Meant to add, he can't have onion either - has reflux issues developed.

Meatballs in a creamy mushroom or leek sauce (can he have leeks?)

For next time, you could slowly cook down peppers and blitz them To make an alternative passata

That's a great suggestion CurlsLDN. I only hope he doesn't develop intolerance to peppers next. My DM is a bit allergic to peppers, gives her heartburn which basically is reflux.

There's a nice swedish style sauce online if you google it. It's got cream in it.
Can't find it at the moment, but I've got it somewhere.

In the end I did shell pasta, boiled with some fresh stringless beans cut up, then mixed through some olive oil and put in a bowl with the fried meatballs on top and a bit of thinly grated cheese on the very top. Looked lovely and tasted delicious. DD loved it too.

The ice cream van has just pulled up but we are too stuffed to go and buy any.

When my DS couldn't eat tomatoes I used to use puréed beet root (cooked vacuum packed not the kind in vinegar) and grated carrot in place of the tomatoes. Not sure it would work with meatballs, but just thought I'd mention it in case you were looking for a replacement in spag Bol etc

I make (when feeling slummy) Ikea-style meatballs - fry off the meatballs with a bit of garlic and maybe some mushrooms, remove and put in gravy and creme fraiche. Once it's a smooth sauce re-add the bits, eat with pasta or mash. Yum!
