Light, quick family meal .. what would you cook?

We are out tomorrow and will be having a picnic lunch (ham rolls, cocktail sausages, chicken drums, fruit and cake)

When we get home I need something light and quick for dinner.

What do you cook in these circumstances?

Scrambled eggs, boiled new potatoes with butter and a big salad. Fruit and cake after if there's any left!

I would do salad with wedges and use up the inevitable overstocks of food bought for the picnic.

I make a quick sauce with passata, red peppers, onion, garlic and chorizo, stir it through some pasta shapes and grate parmesan on top.

Roast new potatoes and red onion ( a pepper if I have one)and chorizo topped with a poached egg.

Or salmon baked in a bag with broccoli, mini corn, chilli, garlic and ginger. Add some soy sauce. Done.

I might even do a veg soup, as it's light and you're picnic sounds meat/ carb heavy so a nice veg soup would balance it nicely- I would go for a spring veg soup, or a Thai squash soup.
