creme fraiche - what can I make with it?!

I've a 500ml tub of half fat creme fraiche that needs using by tomorrow. What can I make with it, even if something to freeze and eat later? Thanks!

Grate a courgette, fry it until soft, stir into creme fraiche with some seasoning and grated cheese - yummy pasta sauce.

It keeps well beyond the use by date, I find, just like yoghourt. It's very good mixed with mushrooms and spinach to have with pasta or rice, or you could stir it into a simple chicken casserole (chicken browned in butter/oil with diced/sliced onion or leek, celery, carrot; add some stock, seasoning, bouquet garni; creme fraiche added at the very end just to heat through). Lovely with potatoes and some sort of green vegetable.

if you have the courgettes then I'd do a dauphinoise effort

slice the courgettes and sauté them in some butter till they are about half done...plenty of S&P

arrange them in a shallowish dish, layer in some sort of piggy slices (ham/bacon) and some brie cheese and then really stir the creme fraiche, maybe add some milk to make it pourable and tip it over.

Oven bake with more cheese on the top...not for the faint hearted, without the ham it is a nice side dish, but lots of cheese and ham it's a great lunch/supper dish.

You can do similar with leeks.

Pan fry some chicken pieces with onions. Add a tablespoon of whole grain mustard, pour over the creme fraiche and warm gently. Serve with rice and green veg. Heavenly!

Just thought of another recipe which I made for my dad as he is on an extremely low-fat diet.

Take a tub of very low fat creme fraiche. Stir in a few big spoons of icing sugar. Serve with raspberries or other fruit for a very low fat dessert. just ignore the ton or so of sugar in it

I used to roast fish/chicken with halved cherry tomatoes. Once done, take tomatoes and squish/stir into creme fraiche. Yummy sauce.
