Stuffed peppers - what do you stuff yours with, meat or no meat? Ideas appreciated.

Hi, I've been growing peppers from seed and they'll be ready to harvest in round about a months time..yay !

I seem to have quite a lot, so the idea is to freeze some, and stuff some for lunch, so ideas are welcome.

I've noticed it's mainly rice used as fillings, but we're not too keen on rice, so looking for something thats filling, healthy and tasty. But not necessarily in that order Grin

We're not vegetarian, but happy with non meat fillings too. Any ideas more than welcome Smile

chilli mince (mince, onions, garlic, cayenne/paprika, oregano, black pepper, tin of tomatoes, tomato puree) topped with a slice of mozarella, with garlic bread : )

I cut the pepper in half, drizzle with olive oil, and then chop a Capricorn goat cheese in half and put half in each bit of pepper, rind-y side up. Bake for 15-20 minutes and have with a rocket salad. Makes a really nice summery lunch. Oh and I sometimes throw in a few pine nuts just because I like them!
