Genuinely simple meals (for crap cooks), I have one and it's gorgeous

Penne pasta
Smoked trout
Brocolli
Sugar snap peas
Lemon juice/zest
Dill
Cream
Salt and pepper.

It's heaven!

It's so nice to make a meal which takes literally 20 minutes (actually 20 minutes, fellow crap cooks will understand the frustration of recipes saying they take x amount of time and it somehow ends up being double due to crap cookness) and tastes lovely, isn't complicated, laborious etc.

I'd be very interested in any similarly easy meals (especially those which would do for 2 people, well 1.5 really...)

I look in awe at those flame throwers on TV. Meanwhile my glorified camping stove potters away in it's own sweet time, making a total mockery of any stir fry timings.

A Nigel slater one. Take good sausages. Skin and make the filling of each into two meatballs, cream, sage mustard to taste and pasta. Really nice and very easy.

Cooked chicken, bacon, mushrooms, tagliatelle, garlic Philadelphia.

Fry bacon & mushrooms, add chicken to heat through. Cook pasta. When pasta is cooked drain & add tub of garlic philly. Stir through & add chicken, bacon & mushrooms.

Or get some of those McCain jacket potatoes. Cook, then scoop out the flesh. Mash with cheese, spring onion, maybe some bacon and and egg yolk. Stuff back into the skins & pop under grill or in oven for 5-10 mins until cheese is melted & a bit crispy. Lovely with sausages or chicken drumsticks.

I have given this one before, but it works

1 can Cambells condensed soup
1 jar tub of creme fresh or soured cream
1 packet of chicken breasts

Optional - one or two sliced mushrooms

Put it all in the slow cooker for a few hours, or in the oven for 35 mins.

2 rashers bacon
1 red pepper deseeded and cut into four
1 red onion peeled and cut into 6
pasta
3 tbsp mayonnaise
2 tbsp bbq sauce

Put the red pepper and bacon on a baking tray. smother the red onion in olive oil then onto baking tray too. Roast until bacon is crispy and pepper starts to char. Cook pasta. Slice pepper and red onion. Mix everything together.

Sweet potato cut into chunks.

Red onion cut into wedges

Red/yellow pepper cut into chunks.

Slices of chorizo

Chicken thighs and/or drumsticks.

Put them all in a roasting tin, mix in a bit of olive oil and cook at Gas Mark 6 for 45 minutes or so.

You can do all the chopping in advance and just leave the roasting tray full of stuff in the fridge until
it goes in the oven.

Diced casserole beef
Tin or two of cream of tomato soup (enough to generously cover the meat)
Sliced carrots
Pop in low oven until meat is tender. Add dumplings if you need extra comfort food.

ooh, i have smoked trout that was discounted on it's date. don't have cream though. Anyone think lovely thick creamy full fat Greek yogurt would work?

This is my 15 minute meal when I cba to cook.
Put pasta on to boil. Olive oil in frying pan, chuck on diced chorizo, spring onion, chopped cherry tomatoes and and green veg (usually broccoli or sugar snap peas). When its cooked through add a spoon ful of water from pasta pan to make it saucey then toss into drained pasta. Loads of black pepper and parmesan and eat.

Its really easy and really good.

My v v quick and easy standby which dc say is their favourite meal is pasta mixed with tinned tuna, peas, sweetcorn and mayo. Black pepper and parmesan if anyone wants it enough to grate it!

Put 1" milk in a medium sized saucepan, add 1tsp mixed herbs and a few grinds of pepper. Bring to boil and simmer a pack of Fish Pie Mix for 10 minutes. Meanwhile, make mash from a packet or frozen

When the fish is done, take out most of the milk then stir in a big handful of peas and half a pack of ready-grated cheddar. Put in a ceramic dish. Top with mash and more cheese. Oven at 180 ish for 20 minutes ish, or can be frozen/popped in the fridge for later (cook in the oven for a bit longer though so it's properly hot in the middle)

Easiest and most delicious pasta ever:

Cook pasta of choice
Drain
Add jar of artichokes (chop up a bit) and some grated cheese
Stir in pan while it's still hot

Devour

I microwave frozen spinach and mix that through too a lot of things too - pop a couple of rounds of the chopped stuff in a mug in the microwave for 1 minute - instant healthy veg :o

I shove little cubes of frozen spinach into curries, soups, Shepherd's pie, pasta sauces etc. It pretty much disappears apart from some green flecks. Another one who hates slimy cooked leaves.

This is quick and easy and delicious, if you don't bother with the spinach balls (which are delicious but make it much more faffy).
