I just had a few drops of lemon juice to some extra virgin Olive Oil and sprinkle that one. You don't want too strong a flavour.

KBears is good.
Youcanadd crushedgarlic or substitute red or white vinegar for the lemon.
Maybe even somecrushed thyme?

Well Nigella makes THE BEST GREEK SALAD EVER!! owever it isn't quite as you would expect, but it is DAMN good.

The dressing is made with teh red onions.

Basically finely slice a red onion and put in a bowl with loads of olive oil and a few tbsp of red wine vinegar, black pepper, thyme or oragano. Cover and leave for 2 hrs (or overnight in fridge)

If I am ona diet I change the quantities to loads of red wine vinegar and a bit of olive oil.

She then makes the salad with cos lettuce, thinly sliced fennel, tomatoes, crunbled feta, black olives and the dump the red onion mix on top. Squeeze over a lemon and mix.

MMMMMmmmmmmm!!

Peel and crush 1 garlic clove. Put in a jar 3-4 tablespoons olive oil, 1 tablesppon white wine vinegar or 2 tablespoons of lemon juice, crushed garlic, half a teaspoon of fresh oregano, a pinch of caster sugar, salt and ground black pepper. Screw the lid titly. Shake the jar well, then open and drizzle the dressing over your salad. If you don't have a jar, you could do it in a little bowl and use a fork. Good luck!

Twas very nice indeed Fedda (even if I do say so myself). Mine was a cheat's Greek salad without the olives as we simply don't like them! Dressign was 4 tblspns o/oil (e. virgin), 2 tblsp lemon juice, dried oregano (compromise) ... and that was it. Worked beautifully. Must try the Nigella version next time cos it sounds lovely too. Thanks!

I'm really plased for you, Millie 1. It's fun to try out different ideas. Thank you very much for letting me know. By the way, I'm not keen on olives myself but I've tried black pitted once from Sainsburry's delicatessen counter and they were delicious.
