It's my DP's birthday soon. We are beyond skint and we decided not to do anything for our birthdays (they're all close together) and just concentrate on our DS's birthday.

HOWEVER: He loves salted caramel and I would love to surprise him with some, if it's doable for a few quid. He'll only eat Cadbury chocolate (philistine) and we have plenty of that left over from Easter gifts, so I could use that to coat them if needed, or maybe to surround a liquid caramel.

I don't have a candy thermometer. Is this going to be doable and can anyone suggest a good, idiot-proof recipe as I can't afford to re-buy the ingredients if it goes wrong.

Don't have a recipe, but a tip is to put a ramekin of water in the fridge to be really cold, and then when you drop some in to do the test, it will form a ball more quickly.

Soft ball - for fudge
Harder ball, quite chewy - makes caramels
