We've just had a salad of mixed leaves, watercress, chopped fine beans/mangetout/sugarsnaps, quartered cherry toms, red and yellow pepper, red cabbage and sunflower/pumpkin seeds. Olive oil and lemon juice to make it shiny and yummy.
I am on a salad kick at the moment because I'm fat and have various health complications. So my recent meals have included:
frisee and lollo rosso with cubes of beetroot, red kidney beans, cucumber, raw mushrooms, apple and cashew nuts
iceberg lettuce shredded with red and white cabbage, cannellini beans, sultanas, walnuts, radishes and grated carrot
spinach and watercress with redskin peanuts, brown lentils, black olives, celery, cherry tomatoes, cucumber, green pepper and finely sliced red onion
chopped up mangetout/sugarsnaps/fine beans with baby courgette (raw and thinly sliced), parsley, chives, celery and pomegranate seeds
If it's lunch I have a blob of cottage cheese or houmous with it, if dinner I have a fish fillet (salmon, cod, mackerel) or a bit of tinned tuna, or some chicken breast depending on what dh and the kids are having
not to everyone's taste I'm sure, but maybe some of it will be useful!
