Ohhh good God, DP just served me the scrummiest dinner

Quite comfort food-ish, YUM - MEEEEEEEEEEE.

Chicken in red wine with pancetta, shallots, garlic, mushrroms with sauteed potatoes, but actually done in the oven and cauliflower cheese.
Oh MY GOD.
It totally ROCKED.
Had seconds and feel like a massive bloater and loving it!

LOL, no it wasn't.
Tghe chicken was a recipe from Silver Spoon. FAB cook book, Italian bible.
It was all from scratch.

We thought of what to make toigether and went food shoppinmg earlier today and he just sort of got busy while I did the bedtime story thing, and then cracked on with the winer

For the chicken, yeah hang on....

serves 4 (ohhhh ummmm think we may have eaten double what we should have, LOL!!)

50g butter
100g pancetta
100g shallots
1 garlic clove
100g mushrooms
i fresh thyme sprig (although we omitted this as no thyme out there today)
1 tbls plain flour
1 chicken (but we just used the brerasts we had and cut them up)
500 ml red wine

Melt butter, add pancetta shallots, garlic & mushrooms & thyme and cook over low heat for 5 mins, stir now & then
Sprinkle with flour and remove garlic clove and add chicken.
Cover & cook for 10 mins
Por in wine and season with salt.
Cover and simmer for 30 mins.

Serve with sauteed potatoes and wghatever veg but loving the cauli cheese with it.

You don't need recipe for pots and cauli do you?

I have just eaten it now! LOL. There was a bit left and once I'd spotted it in the fridge I decided to have a late breakfast and early lunch!
It was scrummy, even zapped 2 days later in the microwave!

LOL at you knowing it was me from the thread title sandyballs - DP doesn't cook that often you know!
