Cheese on toast

My dcs love cheese on toast. They would eat it every day.

They are fussy beggars.

Whilst I am delighted to be able to add another dish to my tiny repertoire of accepted meals, I would like cheese on toast to be well, a little more nourishing and balanced. What can I do to it to make it so?

We like Nigel Slater's Onion Rarebit recipe, and works fine without the beer.

He has lots of suggestions for variations on cheese on toast/rarebit in his 'Real Fast Food' book, but most sound a bit adult, one that might work for you is to add a poached egg under cheese, but not tried it.....

Can you perhaps try toasted sandwiches and put other tastes in with cheese?

My favourite toasted sarnies are cheese, ham and reggae reggae sauce, and cream cheese and spring onion tyne-teas.blogspot.co.uk/2013/11/the-best-toasted-sandwich.html
