What can I replace ham with in this recipe to make it vegetarian?

Mozarella or gruyere? Or just leave it out. Maybe tapenade or sundried tomato paste if you want a salty and sweet hit?

I'd try slices of lightly smoked aubergine. Have to cut it with a razor sharp knife though. Or, if you want the colour, try red radicchio or razor fine slices of beetroot.

I think thin slices of a cheese like maasdam, edam or emmenthal would work, and I second the idea of the sun-dried tomato paste from a pp Smile
