I think I have previously underrated soup - but had some today at the John Lewis restaurant (tomato, lentil and basil) and it was lip smackerooney.

Have you got a delectable soup recipe that you've tried and tested and can share with me?

I love carrot,orange and coriander soup.
Also leek,onion and carrot sometimes with potato in too.

It's dead easy, you don't need a recipe, just -

2 carrotts, chopped
2 onions, chopped
2 cloves garlic, chopped
large piece of ginger chopped
a chilli pepper, chopped
1 red pepper, deseeded and chopped

Sautee the above gently in some oil for about 3-5 minutes
Add -
About a cupful of red lentils
a teaspoon each of ground cumin and coriander
a tblspoon tomato puree

Sautee for a few more minutes and add about a pint of veg stock, cook for 20 minutes and puree with a handheld blender. Season with salt and pepper and serve with a big dollop of creme fraiche.

All those measurements are approximate! Have Fun!

my version of minestrone

onion, garlic, tin of chopped toms, one red, yellow and green pepper, courgette, mixed herbs, lots of pepper and some veggie stock.
Boil it up then whizz it.
When you re heat it, add a tin of mixed beans and some small pasta shapes.

It's gorgeous and free on a green day if you're at Slimming World

Also, if you like lentil soup and have an Annabel Karmel book, her sweet potato, carrot and lentil mush made with proper stock (and more than she suggsts obviously) actually makes really lovely soup. I didn't believe it until I tried it

Mine is a dead easy veggie soup, simply onion, potato and carrot fried in a little butter then add veg stock (Swiss Marigold is nice) and simmer for about 20 mins. you can either whizz it in blender or eat chunky. Add lots of black pepper and finish with grated cheese. Dead simple, cheap and tasty.
