Got pieces of chicken breast to use up...looking for inspiration

Any ideas please? Preferably that I can do in the slow cooker but doesn't have to be Smile

I don't want to freeze them for a later date because I'm desperately trying to empty my freezer

An idea of what else you have that you could use would be useful.

You could poach them in water and eat them plain, I suppose Wink

Marinate in soy sauce, grated fresh ginger, and honey, then stir fry and serve with rice.

I don't have much in to use with them but I pass a shop on my way home so could call and get something. This is for tomorrow's dinner and I work full time, hence the slow cooker plan if I can remember where it is

I'm liking SDTDs idea...

Thai green curry is nice and quick. Buy coconut milk and some green curry paste then chop chicken and throw in any veg you have spare too (peppers, green beans, mini corn, mushrooms, broccoli). Serve with rice, ready in 20 mins so no need for the slow cooker.

SpottyTeacakes I make my own egg fried rice, I boil the rice a few hours before it's needed (or even the day before) put it in the fridge then stir fry it with a couple of beaten eggs. For special fried rice add prawns, peas, ham, in fact almost anything you like LOL. Tis yummy

I meant SDTG of course not SDTD, sorry...

Leave out the eggs and just have it as fried rice, works just as well and doesn't really taste much different, as I once found out when I'd run out of eggs...

Make little foils envelopes for each one. Stick them in to each with some pesto, olives, cherry tomatoes, onions, and chuck it in the oven.

Comes out lovely and tender and own sauce from the juices.

You're welcome, just don't forget to pre-boil the rice beforehand or it goes all mushy and horrible when you try to fry it again speaks from bitter experience

Sometimes I marinate some red onion (separately, because I don't want to give the chicken an onion-y flavour) in the same stuff, and stir fry it with the chicken.

I use ordinary long grain rice usually.

Tonight I am doing this, but I am going to stir fry some red onion, peppers and sugar snap peas, after cooking the chicken, then add in the chicken, with the marinade and some stock and a load of very fine rice noodles, and mix it all together whilst the noodles heat up.

Search for crumbly chicken and mixed veg pie on BBC good food website. It is bloody amazing and not actually as much work as you'd think. Use tinned or frozen veg to save time, and make sure you read the comments about how much liquid to use. I can't cook but this always gets me compliments. Oh, and use Bacon to bulk out if you don't have much chicken.
