does anyone have a recipe for Carluccio's courgette chilli and garlic pasta...

(with or without the deep fried spinach balls)Had this the other day in our local Carluccios and it was fantastic. I'd love to recreate it with some of our allotment courgettee glut. Does anyone have it in any of Carluccios recipe books? Or maybe someone's manged to recreate it succesfully themselves?

I'm doing mostly courgette pasta things at the moment..i just slow-fry with plenty of olive oil and garlic &chilli and add to cooked pasta. with some slices of preserved lemons and heaps of basil at the end. also nice with melted fontina or other gooey cheese. mmnm

Thanks Bundle your version sounds good too - I actually rang Carluccios this afternoon and a lovely woman from their kitchen rang me back and told me how to do it!

The spinach balls are made with chopped wilted spinach, breadcrumbs, egg and nutmeg - mixed together and deep fried very quickly.

Cook grated courgette garlic and a little chilli in butter (lots of it) and take it off the heat before adding grated parmesan.

They use giant pasta tubes in the restaurant - but I used rigatoni. Very quick, very cheap, very tasty. Yum Yum Yum Yum.
