Interesting sauces free of dairy, soya and tomato?

Hi - has anyone got any nice ideas for sauces? I've made a white sauce using stock instead of milk, and also one using peppers instead of tomato, but I'm looking for some more inspiration please!

Vegan pesto
2 cups, washed, loosely packed stemmed fresh herbs- basil - (you also use cilantro, parsley, mint)
1/2 cup shelled pecans or walnuts or pine nuts
1-2 cloves fresh garlic
1/2 cup good tasting extra virgin olive oil, as needed
Sea salt, to taste

whizz in food processor,
cover with more olive oil and store in airtight jar in the fridge.

Romesco sauce this one has a lovely Spanish flavour and goes well with fish, potatoes or oven-roasted BBQ chargrilled vegetables and bulgher. The original recipe does have a little bit of tomato in it but it's not necessary so just leave it out - the sweetness comes from the peppers.

6 dried nora chillies, or 1 tsp each of sweet and smoked paprika
1 red pepper
Olive oil
1 slice of bread
1 onion, chopped
1 garlic clove (why not two?)
50g blanched almonds, roasted
25g hazelnuts, roasted
White wine, to taste
Red wine vinegar, to taste

Fry Garlic, mushroom and chopped spinach to go with pasta - loosen it with pasta water or stock. I also use this to make a mushroom lasagne but doubt you could do that without dairy (unless you use a cheese substitute)
