I just made egg free chicken nuggets with Chicken Thighs & soy sauce; they were amazing

I used an oil, corriander, soy sauce mix to marinade the chicken thighs then coasted in breadcrumbs & bake

DH was very impressed and I will never use chicken breasts again - these were so juice

Natural yogurt also works as a pre-breadcrumb coating if there's a reason you didn't want to use eggs.
