DC4 is 2 wks old. Got 2 Dcs school age(so they need a good feed at night) and a toddler. DS4 starting to get clingy and need held early evening, as they do. So am compiling a list of easy meals for through the week, things I can literally throw together in five mins with one hand that don't involve driving to the Golden Arches or the chip shop! Please give me your best recipes/ideas for such a scenario. Thanks

Bacon and bean casserole- esp in slow cooker.

Bacon, Cannellini beans, mixed frozen veg, tin toms or passata, herbs and chili powder. Chuck it in the slow cooker on low and it's done. It was my go to recipe when DS2 was at his worst.

Anything slow cooker based would be handy if evenings are manic- as you can put it on when it's a bit quieter in the day and you have an easy meal.

My example would be chopped chicken breast, tossed in flour, paprika and garlic powder, frozen in a bag, take out however many you need at lunchtime, and bake in some oil for for 10 mins till golden. Serve with toast, pasta, frozen veg etc. that type of idea, so I have a few options, as un-labour-intensive as poss Smile

Ah yes great point, got slow cooker for Christmas so will start doing that earlier in the day
