Chicken & rice one pot/bake recipe

Does anybody know how to cook chicken (thighs) and rice in one pot/tray in the oven pls?

Been googling but nothing is inspiring me. Can't have anything too spicy as a toddler and 9mo are eating it...

Anyone make anything like this?

I make this a lot - it is really lovely and I sometimes use thighs instead of breasts. You could cut the spice down a wee touch, but it's really not too hot anyway:

Mmmm mouth watering at all these links! Never tried a pilaf or a jambalaya before and trying to get a bit more adventurous so will save the links!

While on the subject of rice does anyone have an easy way of making spicy rice... you know, like at nandos :o

I do a quick spicy rice using a pre cooked packet :)

Microwave packet of rice, in the meantime, spray a little or add a little oil to a wok, chuck in some frozen peas and tinned or frozen sweetcorn, add the microwaved rice and a few shakes of "season all" seasoning or cajun or whatever you have. and keep mixing it all through add a splash of tobasco or whatever you have. I sometimes add a touch of soy sauce, and/or use chinese type seasoning, it really depends on what you are having it with.

My boys don't really eat potatoes so i need to have some quick and easy side dishes to have with dinner.

disclaimer: I've never been to nandos :o

This spicy rice recipe is pretty easy and probably pretty similar to nandos. You can ignore step 1 if you're not doing the peri peri chicken.
