Peach chutney is fab, google for a recipe as I just wing it.

I roast them (halve, in casserole/dish cut side up, sprinkle with brown sugar, dot w butter, oven 20 min ish) but appreciate they still need to be eaten straight away...

Or just peel, blend and freeze to use later in smoothies etc?

Or blanch them, peel them and put them in a steralised jar topped up with wine, seal it and then boil it in a pan of water for 20 minutes, that's very nice indeed. Then in the winter they can be served with creme fraiche.

Someone here said they blitzed a tin of peaches in the blender then made them into ice lollies - maybe you could try that but you would have to add some juice, maybe diuted apple?
