BOGOF broad beans at sainsburys - what can I do with them?

any ideas for broad bean recipes?

Preparation Time: 20 mins
Cooking Time: 10-15 mins

Serves: 4

Ingredients

600g broad beans (unshelled weight)
1 tbsp olive oil
½ finely chopped onion
2 slices pancetta or smoked streaky bacon ? cut into thin strips
salt and pepper
mint, chopped

Instructions

Shell broad beans. Heat oil in saucepan. Saute onion for 5 minutes ? do not brown. Add bacon and cook for 3 seconds more. Add broad beans, salt and pepper and stir. Add 3 tbsp water and cover saucepan. Cook over a low heat until beans are cooked through ? about 8 minutes. Finish with chopped mint. This dish is good served with roast lamb.

yes! blanche broad beans and fresh peas. slice some courgettes thinly and fry off till browned slightly (about 2 courgette per one bag beans and one bag peas). cool and mix together. crumble in some feta. add some tymme (lemon tyme if you can get it). add a dressing of olive oil, white wine vinegar and dijon mustard. seasonal and delicious

or blanche them, crush with pestle/mortar and add garlic, herbs, olive oil and chillis for a pestoey like sauce for pasta

do take the skins off once you've blanched them though, unless they're tiny, it is worth the faff

bundle, as a vege I think I'll give yours a miss as I can see tht the bacon or pancetta would defo make that recipe

just blanche, de pod, drizzle with olive oil and salt and shavings of parmesan
