is this possible with the salmon fish head and bones

I made stock today with salmon fish head and bones. There seems to be a lot of fish flesh still on the bones which has obviously now poached. Is it a serious ly crazy task to try to remove some of the flesh or will it be too difficult to extract from the bones? Some of the flesh almost looks like a piece of fillet! But I don't know enough about the fish anatomy to know if it looks deceptive..

There is a lot of meat on salmon heads. They sell them at our local market and I often poach them, flake the flesh off to use in sandwiches and quiches. If the flesh is pinky coloured it's good enough to eat.
