Beef Bourguignon for carnivores - what for the veggies?

Having some friends over and was going to do the above with mash and green beans. But I can't think of a veggie alternative. Ideally it would go with the mash and veg. Any ideas?

I love a veg casserole. I put carrots, onions, mushrooms, other root veg that I fancy in a casserole dish with 2 oxo veg stock cubes, 2 glasses of red wine, 3 heaped teaspoons of English mustard and some dried tarragon and cook it slowly for a few hours. It's tasty but the sauce is very thin so I make a roux with some of the sauce and pop it in with it for the last half an hour to thicken it. Yummy.

Vegetarian lasagne, if you don't mind a pasta dish, or a cottage pie made with veggie mince and veg. Or a Mediterranean stew, with a saffron/veggie stock base, into which you add tomatoes, chick peas and possibly other beans ( for protein), Courgettes, carrots, onions, garlic, and thyme. Serve with your veg and either harissa or something like peri peri sauce on the side, so people can spice up.

Yup, thickening the sauce in the Mediterranean one is not traditional but nice.

Or a quiche. Broccoli and stilton, asparagus, artichoke hearts, cheese and mushroom, cheese and tomatoes, really anything.

Roasted vegetables with haloumi and cous cous.

But why not just do one dish? Much less hassle.

I found a recipe for Beetroot Bourguignon the other day. Haven't tried it yet so can't say whether it would be good or not!

I made this mushroom bourgignon last night, and it was bloody lovely! We had it with the noodles in the recipe, but I bet it would be even nicer with mash.
