Does anyone have a tried and tested recipe for prawn stir fry?

Ideally containing bok choi and then whatever other veg. Really fancy trying to make one this evening for dinner. DC are pretty keen on prawns.

Simple Prawn and Broccoli Stir-Fry

Groundnut oil
1 clove garlic, finely chopped
1cm cube fresh ginger, finely chopped
4 spring onions, trimmed and chopped
3oz broccoli trimmed into very small florets (or Bok Choi)
3oz sugar snap peas
Light soy sauce
Cornflour
Sake or dry sherry
2 'nests' of dried noodles
200g peeled prawns
Sesame oil

  1. Cook the noodles for the time indicated on the packet, drain, toss with some sesame oil and reserve
  2. Place the broccoli florets in a heat-proof bowl, cover with boiling water, sit for 3 minutes then drain and reserve
  3. In a small bowl mix a teaspoon of cornflour with two tablespoons soy sauce, 1 tablespoon sake and a little water. Set aside.
4.. Heat a little groundnut oil in your wok and then sizzle the spring onions, ginger and garlic on high heat for a few seconds
  1. Now add the drained broccoli and sugar-snaps & stir-fry on a high heat until they take on some colour but are still bright.
  2. Turn down the heat, add the prawns and sauce and stir through for one minute only
  3. Finally stir through the noodles and serve immediately.
