I can highly recommend making F&Z's wholemeal no sugar banana cake!

Just made some and it's divine! I confess I was a bit skeptical (a cake without sugar?!) but it really works. 'num num' as my ds would say!

what's the recipe??? pleaaaaaaaase... I've got so many bananas at home that really need to be eaten by tomorrow and that isn't going to happen...

i am crap at links but from memory (i think i am right...)

it's

4oz wholemeal sr flour
3 oz raisins
2 oz butter
1/2 tsp mixed spice
8 oz bananas
1 egg, beaten

rub butter into flour (with added spice), add raisins. then mix in the bananas (mashed) and egg

put in oven in well buttered tin at 160 for an hour or until cooked. i think you were supposed to use a loaf tin but i didn't have one and did it in a round one and it worked out fine.

franny suggested making an 'icing' with two parts cream cheese to one part fruit puree/jam which i haven't done yet, just had some hot with butter on it.

absolutely delicious!

I've made this one lots of times, am thinking of trying it without the raisins (my dd won't eat them) and seeing if it is still sweet enough.
