Soup beans have been soaking in cold water since Monday evening

out of the fridge, would you still use them? They don't smell off.

Are they in a cool room? I can't imagine they'd have gone off. Cook them and taste a couple?

Actually beans can be really dangerous. Unless the cool room was -5 and that can be verified I wouldn't touch with a bargepole. And three days is the outside for using uncooked foodstuffs anyway, fridge or no.

As lng as they have been completely covered by the water, I would still use them. I often give beans 48 hours to soak, especially if they've been around for a while... Just give them a really hard boil for 10 minutes before turning the heat down and they'll be fine, I'm sure Smile

I'd use them. I often soak chickpeas for 48 hours as it's good when they start to sprout a bit (I'm told)

Madame Defarge's link is about a completely different issue and I don't think anyone here would recommend you doing what that silly woman did with her beans i.e. use them without soaking them Shock

And unrefrigerated beans can allow toxins to multiply. binary fission anyone?

I have leve 2 Food Hygiene, and ran a restaurant. I would have been shut down if they had found that in my kitchen.

I'm always throwing out stuff that other people would use, and I would use these soup beans, I would soak them for a good while anyway.

I think the worst that could have happened with prolongued soaking was that your beans had started to sprout. If they're not doing that, they'll be fine.

I take it back, sort of. Looking online it seems as if the fermentation process might give it a sour taste.

Only thing is you are meant to change the water daily.
