What to do with a leg of pork?

It was on offer in morrisons marked down to £2 the other day so I stuck it in the freezer.
Plan is its our New Year's Eve dinner as I'm usually too tight to buy pork!

What shall I serve it with? How do I cook it? How do I get crackling?

Anything that's not chicken quite frankly scares me!

The best way to get crackling is:

Defrost pork thoroughly and dry the skin
Make deep cuts through the fat
Dry the skin and fat again
Rub salt into the fat (ordinary table salt will do but salt flakes are better - it takes on a different taste)
Rub with olive oil - just a little

Leave it in the fridge for as long as you can 24 hours if possible

When cooking, put water in the bottom of the tray to just below the fat. Try not to get the fat wet and make sure that the level is consistent throughout cooking.

Turn the oven up full whack and cook for 30 mins, then turn it down to about 160 and cook for at least 4 hours (longer if you can, making sure that the water level is maintained)

Got this recipe from my sis's ex mil to be - sis says it's the only useful thing to ever come out of that relationship!

I would serve it with apple sauce - peel, core and dice a couple of Bradley apples, and stew with a little water until they start to break down, the. Sweeten to taste. I add a bit of cinnamon, ground ginger and mixed spice to make a spiced apple sauce - that goes well with pork.

Bradley apples? That should be Bramley - I am not sure why the iPad autocorrected it to Bradley.

Oh yes, especially the cinnamon, ginger and all spice with apples

Just realised that it is in fact nye tomorrow - if you defrost it overnight then you'll have time to salt in the morning and then slow roast

I would be fine with four hyper under-sixes. If I remember right, the secret is to fill them with sugar and e-numbers, give them cola to drink, and tell them their mum has said they can have a puppy each.
