two Q's - chicken noodle recipe needed and a food safety Q

  1. Dinner tonight. I have two chicken fillets, a courgette, some carrots and some straight to wok noodles (onion peas and corn as well). I have no recipe but I'd love to wow DH with a soup of some kind rather than a bog standard chicken noodle fry up as we are trying to eat more healthily.
  1. Food hygiene Q. I have some leftover mash and oven cooked salmon fillet from lunch. I also have some golden breadcrumbs to use up. I'm thinking of making fishcakes for lunch tomorrow. What is the best way to prep these? Make them now (form them, dip in egg and breadcumb then leave on plate covered) and then bake/fry tomorrow or leave the fish and mash separately in the fridge and construct and cook immediately tomorrow? Its for a child and a baby otherwise I wouldn't be quite so anal!

Thanks in advance

I would construct and cook tomorrow, due the egg content.

There's a good chicken noodle soup recipe here www.nhs.uk/Change4Life/Pages/meal-planner-recipe-finder.aspx
