we have been given a fab 19lb home reared turkey. ive never cooked such a big turkey as I always get a rolled and boned crown so im in new territory.
I'm going to cut off the legs to freeze for later, then im going to stuff it.
how long should I cook it for and at what temperature?
lve looked online but the times vary so much.

Dunno but don't stuff it, do the stuffing separately. I know you're taking the legs off, but that's a huge bit of meat to cook throughout, and evenly. By the time you cook the stuffing in the middle, the outside will be dry.

25 mins per lb plus 25 mins extra? On gas mark 4 - 5.

I agree about not stuffing it. For very large items I always start them off with a good 30 - 40 mins at a high heat.... 200C or so... before turning the temperature down for the rest of the time. 30 mins per lb

Don't stuff it with stuffing, put cut lemons and oranges in it . It will absorb the flavour and keep it moist inside. . With a big bird you gotta baste it to stop the outside getting dry. The USA brine their birds...
