Pepper Sauce (creamy) - anyone got an easy recipe please?

I just make a basic white sauce and put in loads of ground and partially crushed peppercorns. I do the pepper in a pestle and mortar as it takes forever using a mill.

Substitute some of the milk with cream if you like it richer.

Oh and if you want it to look pretty, get the mixed peppercorns that have pink and green ones in too. Doesn't effect the taste much but looks nice

Cook the meat in a pan, i do this w steak. Remove meat, and keep warm. Turn up heatDeglaze pan with splash of brandy/red wine/madeira. scrape up all the crusty bits and bubble the wine. Add some cream, crushed green peppercorns, salt if you like. Pour or spoon over the meat. Delish.

I have a nice Whisky cream recipe for steak but have never done my own peppercorn

Ahh, now that is the big question!

Start with a handful and keep adding until it looks and tastes right.

You need quite a lot before you even start to notice it. Some fully ground so that the flavour mixes through properly, but also some only partly crushed for the texture and presentation.

Wombling's way is the way I would do it generally but the way they used to do it in a restaurant I worked in was:
Slightly spread a lump of butter on your chopping board, stick some(about a tablespoon) black peppercorns into the butter and use the edge of a pot to crush the peppercorns, put the mix into a frying pan and heat, add brandy and flame the lot when it is hot, add a little stock and reduce it a bit, add some cream and reduce that until you have a really nice sauce consistancy. Very delicious!

I press 3 tsps black pepper into the steak. Cook steak in skillet 4 mins each side (i like mine rare). Add 1tsp butter and fry onions, 2 cloves garlic, 1/4tsp each of oregano, basil, chives, parsley. Stir in 1/3 cup brandy, 1/4 cup dry white wine and add an oxo cube. Cook for 5 mins. Stir in 3/4 cup cream and 1/2 cup sour cream.
