Vegetarian wellington accompaniment ideas?

Hello, this xmas eve I am cooking a vegetarian wellington, made with puff pastry (of course), herb pancakes, mushroom duxelles and the inner bit is chickpeas, spinach, red pepper, tahini and cumin. Can't wait to try it Grin. But what to serve with it? I was thinking a bit of watercress?

I'm not sure how far the portions will stretch - feeding about 10 people - how about potatoes?

I really am stuck so would appreciate any advice.

do you eat cheese?

sliced courgettes, fried with onions and garlic.
when done add diced feta, stir, lid on for one minute so cheese softens , then serve.

my Hungarian red cabbage recipe is one big red cabbage, finely chopped, 4 or 5 apples grated - put in a big saucepan.
cook with 100ml neat apple squash and about 3 tablespoonful of raspberry vinegar (or til you think it tastes piquant) till tender.

I'd serve it with roasted veg & feta. Or a warm winter salad. Some salad potatoes if you are trying to stretch the portions.

Sounds lovely...

Savoy cabbage steamed or oven cooked
watercress salad with some oranges in it
a raw coleslaw with apple for sharpness (without mayo)
bulgur wheat
a raw beetroot and chard salad with walnuts and sprouted seeds like alfalfa

celery, orange and peanut salad

Hello thanks for your replies, Zing I will do your red cabbage on Christmas day, sounds wonderful.

I will serve salad potatoes and savoy cabbage pepped up with lemon zest.

you can actually make it ahead, I've already done ours!
just freeze it, then defrost the day before at room temp and heat it through before serving

enjoy!

and yo can add more or less apple squash or a bit of icing sugar

or you can use a mix of apple and elderflower cordial too.
